Hanging In There
I stayed low-carb today, though it wasn’t easy. I am really, really wanting something sweet. I did well, though. After lunch, when it was worst, I ate three strawberries. That settled me down, though it wasn’t exactly what I wanted. (Chocolate!)
Mom fixed one of my favourite dinners … stir-fried chicken and asparagus in a sauce made with fermented black beans. It’s thickened with arrowroot, and I can leave off the crispy “exploding” rice noodles. It’s ever so good!
Now if I can just hold out a few more days until the cravings wear off. I’d like to get into ketosis, which will show that I’m in major fat-burning mode. That would make me very, very happy. But if I eat any refined sugar, I’m not going to get there. So I’m trying to stay strong.
