Back on the Wagon
At last, I am buckling down to really get this lower-carb / controlled-carb thing back into my life. Things have slowed down and stabilised enough that I feel comfortable returning to what is, after all, a rather labour intensive way of eating.
I mixed up a huge batch of chicken salad on Sunday, and that will be breakfast this week. I have scads of sliced veggies in the fridge, and salad fixings. I have meat in the freezer, and the only pasta left in the house is a small box of spaghetti which I keep on hand for the kids. I hate spaghetti.
Last night’s supper was chicken and chevre rolls (baked in white wine), diced beets with a vinegar and honey sauce, and green beans. I had an ounce of bittersweet chocolate for dessert (bittersweet has only about 9g of carbs per ounce).
Tonight I will have leftovers and the kids will have fishsticks (their special request).
